Cheese Making

We are a farmstead cheese producer which means we are controlling the entire process from cow to consumer starting with what we grow at our farm to feed the cows and then later down the road using their milk on our farm to produce our cheese. We primarily make cheddar cheeses and different cheddar flavors. 

We make cheese January through the summer either two or three times a week. Right now we are making cheese on Mondays and Wednesdays. When we are making we have limited quantities of fresh cheese curds for purchase. Cheese curds are fresh cheese before it is pressed and aged. These make a delicious snack! The rest of the year, we are cutting and packaging our cheeses that have been aged and are ready to be cut and packaged.

Our cheese making process is fairly simple and just takes a little time. We make two vats of cheese each time we make with each vat produces about 2,600 pounds of cheese. There is nothing artificial in our cheese, just high quality milk and an old-fashioned approach to cheese making.  We offer a vast selection of cheddars as well as other specialty gourmet cheeses made with fresh ingredients. 

Visitors can stop by our farm store to watch the cheese make process as well as sample over 30 flavors of cheese we produce. Annually we produce about 350,000 pounds of cheese. Our cheese is sold in our farm retail store as well as in groceries, specialty shops, wineries and used in many restaurants throughout TN and surrounding states as well.
